Emma’s Brownie

IMG_0560.PNGThis is my daughter’s recipe and I have been so lucky to be allowed to add it to my food blog. I would say it is the best brownie in the world. My daughter has been making this since she was 4 years old. It is her signature dish and I am proud to share it with you.

175 g dark chocolate
175 g butter
250 g brown sugar
A pinch of salt
3 large eggs
125 g flour
2 tablespoons vanilla sugar
100 g white chocolate chips or white chocolate chopped into pieces.

Preheat the oven to 180C. Line a square cake tin with baking paper. Place the chocolate in a heatproof bowl and set it into a saucepan with water. Heat the water until it is simmering. Turn the heat down and stir until all the butter and chocolate have melted. Remove the bowl from the heat and leave to cool for a few minutes. Stir in the salt and sugar. Whip the eggs in a seperate bowl and add them slowly to the chocolate mixture. Sieve the flour and the vanilla sugar into the bowl with the chocolate mixture and stir until you have a an eaven mixture. Add the cake mixture to the cake tin and bake in the middle of the oven for 20-25 minutes or until the cake is light brown. The cake should be soft in the middle. Leave to cool a bit before you cut it into squares. Serve with vanilla ice cream, some reduced condensed milk  and enjoy!
