This dish a dear old friend made for me a long time ago and it was so nice and such a treat to be served this dish. I have made this dish lots if times and my family just loves it. It is quick, easy and ver tasty.
Ingredients (serves 4):
12 rashers streaky bacon
300 g mushrooms
1 red onion
1 clove of garlic
300 g of creme fraise
400 g penne
Parmesan to serve
Cook the pasta in boiling water in a large non-stick saucepan according to pack instructions. Meanwhile, finely chop the onion and the clove of garlic, slice the mushrooms and cut the bacon into bite-size pieces a sharp knife.
Reserve a few drops of the cooking water in a cup or bowl, then drain the pasta and set aside. Fry the bacon and mushrooms in the same pan until golden. Keep the heat high so the mushrooms fry in the bacon fat, rather than sweat. Add the garlic and the onion and let it fry for 5 mins.
Tip the pasta and reserved water back into the pan and stir over the heat for 1 min. Take the pan off the heat, spoon in the bacon and mushroom mixture and crème fraîche and stir to combine. Sprinkle with parmesan
