Peruvian Ceviche


Ceviche is lovely as an appetizer. It is made from fresh fish which is marinated in citrus juices. It is delicious and easy to make. Pair it with a glass of Champagne and you have the perfect party food.

Ingredients (serves 4):

1 red onion
1 red chili pepper
1 clove of garlic
125 g cod fillet (freeze before use)
125 g salmon filet (freeze before use)
1 pinch of salt
2 lime
2 spring onion finely chopped into slices
1/2 box corn
1 finely chopped tomato

Defrost the fish slowly until it is almost defrosted. Cut the fish into thin slices. Finely chop the chili pepper, clove of garlic and cut the red onion into slices. Add the fish to a bowl and add lime juice from 2 limes. Mix carefully. Add the chili pepper, garlic and onion, then cover and leave in the fridge for 10-15 minutes, stirring carefully once in while. Remove from fridge and add the tomato and the spring onion.
Top with fresh coriander and mint leaves. Serve with freshly baked bread and a glass of champagne.
