There are so many lovely norwegian apples at the supermarket these days. I had bought to many so to make sure they didnt go to waste I made this apple cake. It was juicy and tasty and it is definitely worth a try.
4 dl sugar
2 ts vanilla sugar
7 dl flour
4 teaspoons baking powder
1 dl skimmed milk
150 gr melted butter
Mash from four peeled apples (mash the apples with a hand blender)
3 apples peeled and cut into wedges.
Whipp eggs, sugar and vanilla sugar thoroughly. Add the baking powder, milk and butter a bit at a time alternating the ingredients until you have added all. At the end mix gently in the apple purée. Add the mixture to an elongated baking tray covered in baking paper (27 x 38 cm) or use a large round cake tin. Top the cake mixture with the apple wedges. Press the apples into the cake mixture so that you can barely see the top of the apples. Sprinkle over the sugar, biscuits and cinnamon mixture. Bake for 40 minutes on 200 c in the middle of the oven.
2 teaspoons cinnamon
50 gr brown sugar
6 bixit biscuits
Crush the biscuits in a plastic bag using a rolling stick and mix in cinnamon and sugar.
