This is a fast and tasty recipe. Delicious combination of Prosciutto and gorgonzola. You can prepare the sauce while the pasta cooks. It is rich and tasty and the perfect match to a Barbera di’ Asti or a Merlot.
Ingredients (serves 6):
1 tablespoon olive oil
2 red onions sliced finely
150 g Prosciutto Crudo
100 g sundried tomatoes
1/4 dried chili pepper, or you can add more if you like the dish to be a bit more spicy
1 1/2 dl chicken stock
1 dl double cream
500 g linguine
100 g gorgonzola cheese in pieces
Heat the oil in sauce pan. Fry the red onions until golden.
Add the Prosciutto, the sun dried tomatoes and the chili. Fry until the
Prosciutto is crispy. Add the chicken stock. Reduce the stock by at least half before stirring in the cream. Cook the linguini according to the instructions on the pack. Mix the pasta and the sauce and stir in the gorgonzola and the parsley at the end.
