Lobster Linguine


Ingredients (serves 4):
1 Red chili
100 g butter
1 tablespoon parsley
1 garlic clove
1 pinch of freshly ground pepper

2 cooked lobsters

1 pinch of salt
500 g linguine

2 dl finely mashed dried crumpets or any other white dried bread
1 tablespoon parsley
Zest of 1/2 lemon
1 ss olive oil

Tomato sauce:
1 red onion
1 tablespoon Worcestershire sauce
4 cloves of garlic
0,5 teaspoon of hot chili sauce
1 tablespoon of finely chopped parley
2 tablespoons of oliveoil
1 pinch of ground black pepper
1 pinch of salt
1 dl water
1 tablespoon sugar
1 box tinned tomatoes

Chili butter: finely chop the garlic and chili pepper. Mix with the butter which should be at room temperature. Add salt and pepper to taste. Add a handful of finely chopped leaf parsley.

Cut the lobsters in half. Remove the claws. Rub the meat side with the chili buttered. Crush the claws and remove some of the shell. Push some chili butter into the remaining claws. Put the lobster on a plate and leave it in the fridge while you prepare the tomato sauce and the pasta.

Finely crush the crumpets. Heat the oil in a frying pan. Add the crushed crumpets and fry while stirring until the crumpets have turned golden brown. Add the zest from 1/2 a lemon and remove the pan from the heat. Transfer the crumpets to a bowl mix in som chopped parsley and leave for later.

Finely chop the red onion and the garlic cloves. Heat the oil in a large sauce pan on medium heat and fry the red onion for about a minute. Add the garlic and a pinch of salt and pepper. Fry until the onion is soft. Add the Worcestershire sauce, Chili sauce, sugar, and mix well. Fry for another minute. Add the tinned tomatoes and water. Cook for about 6-8 minutes.

Boil the pasta according to the directions on the packet. Mix the pasta with the tomato sauce.

Heat a large frying pan. Add two of the halved lobsters and the claws to the frying pan and fry with the meaty side down for 2 minutes. Turn the lobster and fry the other side for 2 minutes.

To serve: Add some of the pasta and tomato sauce to the plate. Add one half lobster and a claw. Add some breadcrumbs to the lobster and serve with a crips glass of champagne.
