I used to buy sandwich roast beef from the supermarket. But after I found this recipe I almost never buy the pre-made supermarket one. I will last in the fridge for up to three days but my family likes it so much that it is never a problem with the expiry date.
1 tablespoon smoked paprika
2 teaspoons red chili pepper flakes
2 tablespoons olive oil
salt and freshly ground black pepper
750 g fillet steak
In a resealable bag, mix together the paprika, pepper flakes, olive oil, salt and pepper. Add the steak, seal bag and refrigerate overnight.
To cook the steak, heat a grill pan over high heat or use the grill function in your oven. Grill the steak, turning once, about 8-10 minutes total for medium-rare. Let steak rest before slicing.
Add som slices to a brown bread sandwich with a few slices of goat cheese and some apricot jam. Or you can combine it with, brown bread mayo, fried onion and some pickled cucumber. The latter one is my family’s favorite.
