Ingredients (serves 4):
500 g Mussels
2 tablespoons fresh leaf parsley
400 g tagliatelle (fresh or dry)
2 tablespoons olive oil
2 tablespoons salt
1 tablespoon dried oregano
1 box good quality tinned tomatoes
3 tablespoons fresh basil
0.5 dl olive oil
1 teaspoon chopped thyme
0.5 teaspoon salt
0.5 teaspoon freshly ground pepper
1 tablespoon sugar
3 cloves garlic
Start with preparing the tomato sauce. Fry the chopped onion and garlic in olive oil. Add the tinned tomatoes, bring to a boil and let it boil for 5 minutes until the sauce has thickened. Add sugar, salt and pepper to the taste.
While you make the sauce boil the pasta in salted water with a bit of olive oil.
Clean the mussels, rinse in cold water and knock on the mussel to make it close if necessary.
Add the mussels to the sauce. Put the lid on and boil for 5-7 minutes.
When the mussels are done add the pasta and the parsley to the sauce and serve straight away.
