Lime Marinated Salmon

This starter is quick to make, fresh and makes the perfect party food for a summer evening with good friends. I paired it with a dry Riesling, a Carl Loewen Riesling Quant Trocken 2015, which comlimented the dish perfectly.

Ingredients (4 portions):
200 g good quality salmon
2 tomatoes
2 spring onion
1 lime
1 tablespoon olive oil
1 teaspoon lemon pepper or sea salt
Dried chili flakes
1 bag salted nacho chips
2 tablespoons sour creme

Method:
Cut the salmon and tomatoes in small squares. Cut the spring onion into fine rings. Mix lime juice, olive oil, lemon pepper (or salt), and spring onion. Add the salmon to the marinade and marinate for 5-10 minutes. Add the salmon mixture to the nacho chips and top with some sour cream and some dried chili flakes. Serve straight away.
