Salmon Tartare

This starter is so easy and tasty. It is the perfect starter for a summer party. I paired with it a Kühling-Gillot Qvinterra, a dry Riesling which really complimented the dish.

Serves 4:
200 g good quality fresh salmon, cut into 0.5×0.5 cm pieces.
2 tablespoons of finely chopped chives
2 tablespoons of good quality olive oil
Salt to season
1/2 ripe avocado cut in to ca 0,5 x 0,5 cm pieces
1/2 ripe mango cut in to ca 0,5 x 0,5 cm pieces
1/2 red chili pepper finely chopped
1-2 spring onions finely chopped
1-2 tablespoons olive oil
The juice from 1/2 lemon
Small bunch of fresh coriander, roughly chopped
Sea salt to taste
Balsamic vinegar to taste

Use fresh salmon of good quality. It is recommended to freeze the salmon before you use it raw.
Mix salmon, olive oil, chives and salt to taste. Leave in the fridge while you prepare the salsa. Mix together the mango, avocado, chili, lemon juice, coriander, sea salt and balsamic vinegar. Add the salsa to a round ramequin and top it with some salmon. Turn the ramequin to a plate and serve at once.
