Barbecued mozzarella, Serrano ham and spinach

 

Ingredients ( serves 4):

4 fresh mozzarellas
12 slices of Serrano ham
1 handful and 4 sprigs of fresh rosemary
1 bag of fresh baby spinach
2 tablespoons of Aksaie honey
Juice from 1/2 lemon
Olive oil
Salt
Freshly ground black pepper

Method:

For each portion make a star shape out of 3 slices of Serrano ham. Finely chop fresh Rosmary and add to the Serrano ham. Put the Mozarella on top of the Serrano ham and add salt and freshly ground pepper. Fold the ham over the cheese and make small mozzarella packets. Us a Rosmary sprig to secure the Serrano ham to the cheese.

Rinse the spinach and add to 4 plates. Put the cheese and ham packets on the barbecue and grill on medium heat for a few minutes on each side to heat the cheese thoroughly.

Mix together the honey, lemon and olive oil to make a dressing. When the cheese and ham packets are hot add on top of the spinach and drizzle over the honey , lime and olive oil dressing. Enjoy!
