If you are after a healthy and delicious burger then this salmon burger is a good choice. It is easy and perfect for the barbecue.
Ingredients (4 servings)
4 salmon fillets
1 tablespoon paprika
1 tablespoon cayenne pepper
2 cloves of garlic, finely chopped
½ dl olive oil
1 grilled and skinned red pepper, cut into big chunks
300 g fresh pineapple sliced
6 leafs Little Gem salad
4 tablespoons sour cream
4 burger breads
Mix all the ingredients for the marinade. Add the salmon to the marinade and make sure all the salmon fillets are well covered with the marinade. Let the salmon marinade for several hours in the refrigerator.
Barbecue the pineapple and the red pepper until they are tender. Add the salmon fillets to the barbecue and grill for about 3-5 minutes on each side or until they are done. Season with salt and freshly ground black pepper.
Heat top and bottom of the burger bread quickly on the barbecue. Smear the sour cream on the bottom of the burger bread. Add the salad, salmon, pineapple and the red pepper.
