Roasted Goat Cheese Stuffed Figs with Lavender Thyme Honey

imageIt’s not easy getting hold of fresh figs in Norwegian stores and you might have to do a bit of searching to get hold of them. But it’s worth the extra time.The honey in this recipe makes it a little more fragrant and delicious and is definitely worth the extra few minutes to make.

Ingredients (Serves 4):

1/4 cup honey
3-4 fresh thyme sprigs
1/2 teaspoon dried lavender flowers
12 fresh figs
goat cheese

Method:

Heat honey in a pan over very low heat until liquified and add thyme and lavender. Leave for a while to let the honey absorb the flavors (steep).
Preheat oven to 220 C.
Quarter figs and place on a baking sheet. Stuff with goat cheese and roast in oven for 12 minutes until soft.
