Pasta all’Amatriciana

img_3830I love Italian food and the great thing with italian food is that it tastes so good with just a few ingredients.This dish is rich in taste and smell and is made with basic ingredients; tomatoes, bacon and cheese.

Ingredients (serves 4)

100-150 g bacon, cut in small cubes
1 onion, finely chopped
2 garlic cloves, finely chopped
1-2 pinches of dried chilli flakes
2 teaspoons tomato paste
1 pinch of sugar
1 can chopped tomatoes
2 large handfuls of finely grated pecorino cheese (you can use parmesan)
Salt and pepper to taste


In a large saucepan fry the bacon until it turns lightly browned.
Add the onion and garlic and fry until they are soft.Then add the chili flakes, tomato puree and a pinch of sugar. Let it simmer for a few of minutes.
Pour in the chopped tinned tomatoes and season with salt and pepper and let it simmer while cooking the pasta. When the pasta is al dente drain well.
Add half of the cheese to the tomato sauce. Stir until the cheese is nicely blended with the sauce. Add the drained pasta to the tomato sauce. Now add the remaining cheese. Blend the pasta, tomato sauce , cheese and mix well. Enjoy!
